After being given cookbooks for Christmas, I realized it was probably time I stopped heating up Lean Cuisines and started learning how to make a real home cooked meal. My mom and I are Pinterest addicts, so she found a recipe for Baked Turkey Quinoa Meatballs on there that I decided to try out. They were...mediocre at best. My family seemed to like them, but I think they were missing something, maybe more oregano, maybe parmesan cheese.
Ingredients:
1 lb. ground turkey
2/3 cup quinoa, cooked
3 garlic cloves, minced
1 egg
1/4 cup diced red onion
1/2 tsp black pepper
1/4 cup chopped parsley
1/2 tsp dried basil
1/2 tsp oregano
2 c tomato sauce
Preheat oven to 350 degrees. Cover baking sheet with parchment paper. In a large bowl add ground turkey, quinoa, red onion, garlic, parsley, basel, oregano, egg, salt, and pepper.
Mix well. (I asked my Mom do this part for me because I didn't want to get meat under my nails...typical.)
Roll into 1-1 1/2" balls and place on baking sheet.
Bake 30 minutes until meatballs are firm and cooked throughout. Whip up some pasta, and heat tomato sauce in a pan.
Put meatballs in tomato sauce, then ENJOY...or if you're me...don't.
