Today is National Cupcake Day! While I absolutely love cupcakes, I know that they are not a healthy option especially on a random Tuesday morning. However, that does not mean that we can not enjoy delicious cupcakes in a healthier manner!

Strawberry Shakeology Cupcakes

  • 5 scoops Vanilla Shakeology
  • 1 teaspoon baking powder
  • 1 cup pureed strawberries
  • 3 eggs
  • 1/4 c coconut milk
  • 4 tbsp coconut oil
  • 3 tbsp coconut butter (for frosting)
How to:
  1. Preheat oven to 350 degrees.
  2. Use coconut oil to grease muffin tins.
  3. Mix strawberries, coconut milk, coconut oil, and eggs.
  4. Add in protein powder and baking powder.
  5. Spread batter evenly amongst muffin tins.
  6. Bake 7-10 minutes.
  7. (while muffins are baking) Microwave coconut butter for 10 seconds. 
  8. Blend until creamy.
  9. Place in fridge until frosting stiffens.
  10. (when muffins are cooled) Spread on top of muffins.
Enjoy these delicious, slightly guilt-free, cupcakes!
