Today is a holiday I can get behind...National Nacho Day. While nachos are flipping delicious, they can also be high calorie, high fat, and high sodium. Here is a nacho recipe that is 21 Day Fix approved, running at only 258 calories per serving.

Ingredients (per serving): 
  • 1 corn tortilla
  • 1/2 medium lime
  • dash chili powder
  • 1/4 c pinto beans, cooked
  • 1 oz shredded cheddar cheese
  • 1 medium tomato chopped
  • 1/4 c diced onion
  • 1/4 medium green bell pepper
  • 1/4 jalapeno
  • 1/4 avocado
  • 1 tbsp greek yogurt
  • sprig of cilantro
  • sea salt
How to: 
  1. Heat oven to 375 degrees.
  2. Cut corn tortilla into wedges. Brush both sides of "chip" with olive oil and spread evenly on a baking sheet.
  3. Bake chips 10-15 minutes, or until crisp.
  4. Squeeze lime over chips. Dash with chili powder and sea salt to taste.
  5. Layer with beans and cheese.
  6. Bake 3-4 minutes.
  7. Top with tomato, onion, bell pepper, jalapeno, avocado, cilantro, and greek yogurt.
