Cooking with Cate

One of my favorite healthy, easy, delicious dinners to make is Southwest Salad. I use romaine lettuce, shredded cheddar cheese, black beans, corn, grilled chicken, and diced avocado. Some add diced tomatoes, but I'm not a fan. On top I add a creamy chipotle dressing that can be a heavy calorie adder, so measure it out per serving. In a large bowl combine it all and throw it in the fridge for 30 minutes. 

You'll love it. I promise. If I could eat it every night, I would.
