Ingredients (per serving):
- 1 corn tortilla
- 1/2 medium lime
- dash chili powder
- 1/4 c pinto beans, cooked
- 1 oz shredded cheddar cheese
- 1 medium tomato chopped
- 1/4 c diced onion
- 1/4 medium green bell pepper
- 1/4 jalapeno
- 1/4 avocado
- 1 tbsp greek yogurt
- sprig of cilantro
- sea salt
How to:
- Heat oven to 375 degrees.
- Cut corn tortilla into wedges. Brush both sides of "chip" with olive oil and spread evenly on a baking sheet.
- Bake chips 10-15 minutes, or until crisp.
- Squeeze lime over chips. Dash with chili powder and sea salt to taste.
- Layer with beans and cheese.
- Bake 3-4 minutes.
- Top with tomato, onion, bell pepper, jalapeno, avocado, cilantro, and greek yogurt.
